Condensed milk production line
Sweetened condensed milk is yellow, with the appearance of the egg yolk paste. traditionally sweetened condensed milk is filled in the cleaning sterilization pot, so it is no longer sterilized after canned. In modern times, sweetened condensed milk filling is also filled in sterile paper bags. Sweetened condensed milk can be packed in 300 kg of casks, which is supplied for mass production.

 

Product details

Before evaporation, the values of dry solid content of fat and not fat need to be standardized. after the heat treatment microorganism and enzymes that  may also cause problems are eliminated and protein composition is stabilized. Heat treatment is crucial to arouse product viscosity during storage, especially sweetened condensed milk. the key step of Sweetened condensed milk production is sugar adding, the life of the product is decided by the status of osmotic pressure, the water phase should have at least 62.5% of sugar. There are two kinds of sugar adding method,

Adding dry sugar before heat treatment

Adding syrup in the process of evaporation

The various stages of sugar influence the viscosity of the products.

General multi-effect falling film evaporator is used. In the process of evaporation, sugar is added into the evaporator, syrup flows and mixes with milk, evaporation continues until it reached the requirements of the dry matter content, the amount of dry matter can be indirectly tested by testing concentrate proportion.

Sweetened condensed milk must be cooled after evaporation, it is a most important crucial step in the whole production process. A half of the lactose in the liquid is held in the moisture in condensed milk, the remaining half is precipitated in the form of crystallization state. If the redundant lactose is freely precipitated, then the crystallization is very big, which cannot be used in many ways due to the sanding of products. Therefore, it is better to control the crystallization of lactose to form small crystals,  crystallization process is finished when the mixture is stirred fast and strongly without mixing with air. The condensed milk after cooling is pumped to storage tank and kept for a few days to complete crystallization process thoroughly.
